We are in the thick of corn harvest, which means being up before the sun and walking through the door at the end of the work day well after dark. My husband needs something he can eat on the go for breakfast, and these Mega Kiwi muffins are the perfect solution!
Here is what you need:
3 Mega Kiwi - diced (approximately 1 cup
4 cups all purpose flour
2 tbsp baking powder
1 tsp salt
1 cup granulated sugar
1/2 tsp cinnamon
2 eggs slightly beaten
2 cups milk
2 tsp vanilla extract
1/2 canola oil
turbinado sugar for dusting
Directions:
1. Preheat oven to 400 degrees. Line muffin tins with paper liners.
2. Sift flour, salt, sugar, cinnamon and baking powder in a bowl and mix well.
3. Beat together egg, milk, oil, and vanilla in a medium sized bowl. Slowly mix into the dry ingredients.
4. Fold in the Mega Kiwi
5. Spoon mixture into the paper liners and fill them about 3/4 full. Sprinkle with raw sugar.
6. Bake for 25 minutes or until muffins are slightly brown and a toothpick inserted in the center comes out clean.
Makes 24 muffins

Pre-measuring the ingredients is also a quick-tip I share with my friends! While the kids are down for a nap it never hurts to be prepared in the time saving department.
Measure the milk, canola oil, eggs, and vanilla extract into a medium sized bowl and briefly beat them until evenly mixed.
Add your wet ingredients to the flour, sugar, salt, and cinnamon mixture. Give it a good stir until well blended!

Fill the paper cups about 3/4 full and sprinkle some raw sugar on top ( I am a bit heavy-handed with the sugar here, because who doesn't love that sweet first bite into a crunchy top muffin?).
Pop them in the oven for 25 minutes or until golden brown. The wait is always the hardest part - but OH SO worth it.
